Fajita Lettuce Tacos


  • 2 Chicken Breasts
  • Steak Strips (These were labeled “for stir-fry” at the grocery store)
  • 1 Green Bell Pepper
  • 1 Orange or Yellow Bell Pepper
  • 1 Sweet Onion
  • Romaine Leaves for Shell
  • Cilantro
  • 2 Limes
  • 2 Avocados
  • Seasonings: Chili Powder, Paprika, Garlic Powder, Salt, Pepper
  • Optional Toppings: Salsa, Guac


  1. Preheat oven to 400F
  2. Line 2 cookie sheets with aluminum foil
  3. Mix all seasonings in a bowl – about a table spoon of each, teaspoon each of salt and pepper
  4. Cut chicken and steak into strips (if its not already)
  5. Chop peppers and onions into strips
  6. Coat chicken and steak in seasonings and lay in a single layer on one of your pans
  7. Toss veggies in olive oil then place them on the other pan
  8. Bake the chicken/steak for 15 mins (until cooked through)
  9. Bake the veggies for 20 mins
  10. Layer everything and all desired toppings in a romaine shell
  11. Squeeze lime juice over everything and enjoy!
