Fajita Lettuce Tacos
Ingredients:
- 2 Chicken Breasts
- Steak Strips (These were labeled “for stir-fry” at the grocery store)
- 1 Green Bell Pepper
- 1 Orange or Yellow Bell Pepper
- 1 Sweet Onion
- Romaine Leaves for Shell
- Cilantro
- 2 Limes
- 2 Avocados
- Seasonings: Chili Powder, Paprika, Garlic Powder, Salt, Pepper
- Optional Toppings: Salsa, Guac
Directions:
- Preheat oven to 400F
- Line 2 cookie sheets with aluminum foil
- Mix all seasonings in a bowl – about a table spoon of each, teaspoon each of salt and pepper
- Cut chicken and steak into strips (if its not already)
- Chop peppers and onions into strips
- Coat chicken and steak in seasonings and lay in a single layer on one of your pans
- Toss veggies in olive oil then place them on the other pan
- Bake the chicken/steak for 15 mins (until cooked through)
- Bake the veggies for 20 mins
- Layer everything and all desired toppings in a romaine shell
- Squeeze lime juice over everything and enjoy!
