Cilantro Lime Chicken


  • 3 Chicken Breasts
  • For the Marinade:
    • Juice of 3 Limes
    • 1/2 Cup Olive Oil
    • 1/2 Cup Chopped Cilantro
    • Salt and Pepper
  • For the Mango Salsa:
    • 2 Mangos
    • 2 Roma Tomatoes
    • 1/2 Red Onion
    • Juice of 1 Lime
    • 1/4 Cup Cilantro


1. Combine all ingredients for the marinade in a large ziplock bag

2. Let the chicken breasts soak in the bag with the marinade (in the fridge) for 4-6 hours

3. Grill the chicken (or have a dude do it for you like I did)

4. While the chicken is grilling, prepare the salsa by chopping all ingredients for the salsa and combining in a medium bowl

5. Serve the chicken with mango salsa and extra cilantro on top

*I added guacamole the side because everything better with guac

  • On the real, I am scared of the grill so my Dad did all the grilling. But the marinade was PERFECT and made the chicken SO juicy!!!
