Breakfast Casserole


  • 1 medium sweet potato
  • 3 cups spinach
  • 1 cup cherry tomatoes
  • 1 package turkey bacon (I use Applegate because it has no added sugar and it is Whole30 approved)
  • 11 large eggs
  • olive oil


  1. Preheat oven to 350F
  2. Sauté your spinach in a skillet heated with olive oil
  3. Chop your sweet potato into small cubes
  4. Cook turkey bacon in a skillet until done
  5. Chop cherry tomatoes into quarters
  6. Add sweet potato cubes to the bottom of an 8×8 baking dish
  7. Add cooked spinach, chopped tomatoes, and crumbled turkey bacon
  8. Beat eggs in a bowl with salt and pepper
  9. Pour eggs over ingredients in the baking dish
  10. Bake for 45-55 mins until eggs have set completely

  • I LOVE casseroles because you throw everything in, bake, then have enough meals for the week.
  • They are also super customizable. Like if I wasn’t dairy free I probably would add a ton of shredded cheese…
