Breakfast Casserole
Ingredients:
- 1 medium sweet potato
- 3 cups spinach
- 1 cup cherry tomatoes
- 1 package turkey bacon (I use Applegate because it has no added sugar and it is Whole30 approved)
- 11 large eggs
- olive oil
Directions:
- Preheat oven to 350F
- Sauté your spinach in a skillet heated with olive oil
- Chop your sweet potato into small cubes
- Cook turkey bacon in a skillet until done
- Chop cherry tomatoes into quarters
- Add sweet potato cubes to the bottom of an 8×8 baking dish
- Add cooked spinach, chopped tomatoes, and crumbled turkey bacon
- Beat eggs in a bowl with salt and pepper
- Pour eggs over ingredients in the baking dish
- Bake for 45-55 mins until eggs have set completely

- I LOVE casseroles because you throw everything in, bake, then have enough meals for the week.

- They are also super customizable. Like if I wasn’t dairy free I probably would add a ton of shredded cheese…
