Blueberry Lemon Bites
Ingredients:
Dry:
- 1 cup almond flour
- 2 tbsp coconut flour
- 1 tsp baking powder (always use aluminum free if ya can)
- 2 tbsp coconut sugar
Wet:
- 1 large egg
- 1 tbsp agave (or maple syrup)
- juice of 1/2 a lemon
- 2 tbsp melted coconut oil
- 1 tsp vanilla extract
*And 1/4 cup blueberries – fresh or frozen
**If frozen, rinse in a strainer before adding to dough (so your bites don’t turn purple)
Directions:
- preheat oven to 350
- combine all dry ingredients in a mixing bowl
- add wet ingredients into the same bowl
- mix until well combined
- fold in the blueberries
- roll into balls and place on a cookie sheet lined with parchment paper
- bake for 14 mins
- be amazed… this could be my favorite recipe ever

- Seriously, the perfect little bites. I love them as a quick snack, addition to breakfast, or on top of a yogurt bowl!

- Warning: You may want to make a double batch because your whole family will eat em up!
