Blueberry Lemon Bites


Ingredients:

Dry:

  • 1 cup almond flour
  • 2 tbsp coconut flour
  • 1 tsp baking powder (always use aluminum free if ya can)
  • 2 tbsp coconut sugar

Wet:

  • 1 large egg
  • 1 tbsp agave (or maple syrup)
  • juice of 1/2 a lemon
  • 2 tbsp melted coconut oil
  • 1 tsp vanilla extract

*And 1/4 cup blueberries – fresh or frozen

**If frozen, rinse in a strainer before adding to dough (so your bites don’t turn purple)

Directions:

  1. preheat oven to 350
  2. combine all dry ingredients in a mixing bowl
  3. add wet ingredients into the same bowl
  4. mix until well combined
  5. fold in the blueberries
  6. roll into balls and place on a cookie sheet lined with parchment paper
  7. bake for 14 mins 
  8. be amazed… this could be my favorite recipe ever

  • Seriously, the perfect little bites. I love them as a quick snack, addition to breakfast, or on top of a yogurt bowl!
  • Warning: You may want to make a double batch because your whole family will eat em up!
